Bali’s coffee production mainly comes from small family farms in Mount Agung’s Kintamani highlands, where coffee and citrus trees thrive in volcanic soil. Farmers meticulously sort their cherries, then depulp and ferment them overnight using micro-mills. After washing, the coffee is dried on patios. Unlike traditional methods, Bali's wet-hulling process, known as Giling Basah, involves removing the parchment while the beans retain moisture, resulting in a distinct bluish hue.
